They call me the 3 minute man!
Yaykes, that came off wrong…
I’m referring to meal prep you silly sally.
I have a rule, if it takes me longer than 3 minutes
to prep a meal (cooking time not included) I’m not interested!
I’ve mastered both the science and art
of delicious yet weight loss friendly cuisine.
As you will learn, weight loss is all about
‘energy balance’ aka portion control & nutrient
partitioning (eating the right combination of
carbs/fats and protein for you).
For the most part we want balanced meals.
None of that ‘low carb’ crap allowed on my watch!
People are always surprised when I encourage
them to eat their carbs on a weight loss plan!
–Restriction does not work!
It’s all about ‘flexible’ nutrition that helps you
reach your goals but doesn’t leave you deprived
off your favorite foods!
Without further ado, here is a great breakfast idea,
by the way, did you know you can bake avocados???
This is a protein/fat based dish, make sure to balance it out with
carbs, a serving for fresh fruit or toast will do the job!
Baked Avocado Eggs
Baked Avocado Eggs
It might seem odd to bake an avocado, but you’ll love how creamy and luscious it becomes!
Ingredients
4 slices bacon (turkey bacon is even better)
2 firm ripe avocados, halved and pitted
1/4 tsp (1 mL) each salt and pepper
4 eggs
Preparation
In skillet, cook bacon over medium heat, turning once, until crisp, about 8 minutes. Drain on paper towel–lined plate. Chop bacon; keep warm.
Using spoon, scoop out some of the avocado flesh, leaving 1/2-inch (1 cm) thick walls; reserve flesh for another use.
Place each avocado half, cut side up, in well of muffin tin to stabilize; sprinkle with half each of the salt and pepper. Crack one egg into each avocado half; sprinkle with bacon and remaining salt and pepper.
Bake in 425 F (220 C) oven until whites are just set and yolks are still runny, about 15 minutes. Let stand for 5 minutes before serving.
Nutritional Information PER SERVING:
cal 247, pro 10g, fat 21g, sat. carb 8g (28 with toast).
Try these out for breakfast this weekend!
